Chocolate Chip Mint Meringue Cookies

Chocolate Chip Meringue Cookies are awesome.  They are a great way to use extra egg whites, can be festively tinted and/or decorated to match any holiday theme, and are a low calorie and fat treat when you crave something small and sweet.

It’s not difficult to make meringue cookies; you mix together a small quantity of usually on hand ingredients, pipe it onto a sheet and bake for 2 hours.  If your oven is programmable, the baking time becomes a non-issue!

I took a picture of the egg whites beaten until they came together, but it wasn’t pretty, so imagine a bubble bath.  To that add the cream of tartar, a smidge of salt, and mix really well.

With the mixer running at high speed, you drizzle in the sugar until stiff peaks form.  My way of checking for stiff peaks on a stand mixer without removing the beater is to  look for stalactites and stalagmites:

Next add in the mint flavoring (1/4 teaspoon is enough – don’t be tempted to add more), and the food coloring of your choice (I used 6 drops of green – it lightened in the oven).  Lastly, fold in 3/4 to 1 cup of mini chocolate chips.  If you taste the meringue now it won’t be that good – but don’t worry.

Finally it’s time for piping.  I do not own (ok - cannot find) a tip large enough to allow the chocolate chips through – so I just used a bag.  Next time I’ll at least put in the empty coupler for better control (or look for my tip!).  If you have a stadium cup hanging around it’s the perfect holder for filling bags.  These cups are too big for normal drinking purposes, and throwing them away seems wasteful, so I look for ways to repurpose them.

  These don’t spread at all, so they can be pretty close on the sheet.   You could use a damp fingertip and smooth down the tips – but I like them wild looking!

Into the oven for 2 hours.  If you have to run out and pick up a child who missed the bus, make sure to set a loud and annoying timer so that the child who is at home will hear them over his music and take them out of the oven.

They aren’t evenly formed due to the lack of control with the bag – but my kids don’t care at all!  These are perfect – like crispy little Andes Mints.   I still have extra egg whites so I think I’ll try them with other flavorings (almond for sure, maybe maple?)  Add these to your meal plan and enjoy!
