Yes, I know. Everyone and her grandmother has a recipe for breakfast casserole. I needed to take one to a potluck where there would be people with Celiac disease who eat gluten free, and it seems they are always forgotten and end up eating nothing but fruit and cheese.
I knew I wanted a potato base, but did not want to experiment on perfectly nice people by trying mashed potatoes, so I scoured the frozen potato section for some that were free of “food starch.” It took a few tries but I found one by Ore Ida.
There are a few recipes with hash brown bases, some say to pre-bake and some don’t; I decided to do it while I prepped the rest of the filling. It’s not going to come up the sides – just try to close up any big holes

Pork Sausage was immediately out because of the fat content. I used a turkey breakfast sausage. 1 pound of bulk sausage doesn’t look like enough at first, but, it is.
8 eggs seems like a lot, but this casserole will easily feed 10. The cottage cheese I used is lactose free (bonus for me!).
Cheddar cheese went on at the end of the baking time. There is no picture because we needed to get out the door. I took one there – don’t worry, people are used to me…

If you wanted to do this in advance, you could skip pre baking the crust, mix the eggs and cottage cheese and brown the sausage, and just assemble and bake. Assembling it all beforehand would cause the filling to seep below the potatoes and you’d have a sticking issue.
