Yes, I know it is no longer Monday – sorry ‘bout that. We had dinner at a restaurant on Sunday night, so I had a meal on my plan still to prepare yesterday. Eating out is problematic for me. While I greatly appreciate that someone ELSE does the cooking and cleaning and all I have to do is pick what I want, I do not appreciate spending $66 (almost half of my weekly grocery bill!) on a dinner that, inevitably, will give me a stomach or headache later. Frustrating. Those of you who plan your meals to avoid allergens or trigger foods know exactly what I mean.
Anyhow…on to this week’s meals, planned with grocery circular in hand!
Barbecue Glazed Grilled Chicken, Corn, Spinach, Cheesy Garlic Bread, and a Pear Crisp. Love the fact that the chicken will marinate and be ready for me. The vegetables are quick and easy, and the bread takes no time at all. Last week I impulsively bought a cute box of pears, but they aren’t being eaten, so I’m using them in the crisp (had to search for a recipe using pears). Gotta stick to the plan!
Supreme Burritos, Fruit Salsa with Cinnamon Chips. I’ve taken to substituting fresh spinach for lettuce – and no one is complaining! The fruit salsa is a big time family favorite. I might use up the remainder of a jar of Trader Joe’s Mango Chutney to give it a big kick!
Sausage Stuffed Shells and Caesar Salad. The shells are a great do-ahead meal and make enough for leftovers later in the week.
Basil Pork Cutlets, steamed broccoli, couscous. Hello speedy meal! I add extra basil to this. My freezer is well stocked with basil leaves that I washed, dried, and froze in baggies. SO much better than dried!
Mushroom Swiss Burgers, Baked Garlic Fries, salad. I have edited these recipes and my changes are saved in my recipe box. I don’t use the canned soup in the burgers, or the dried soup in the fries. Other members love the recipes as is. I frequently make changes to recipes – both ingredients and serving sizes, to help them fit into my diet.
Chicken and Dumplings, 4 fruit salad. Chicken and Dumplings is a recipe in test. The first time I did it with a whole chicken. It was amazing, but, IMHO, took way too much time. I’m going to use boneless skinless pieces to bring down the fat. The dumplings are sooo good. 4 fruit salad is like fruit cocktail, only it consists of fruits my family likes brought together at the last moment. I think that canned fruit cocktail is rubbery and tastes tinny.
One more crazy week coming up – but at least I don’t have to worry about what’s for dinner!
