Lately it seems that I have more to do than there are hours in the day, so planning meals that work with our crazy schedule is essential!
Over the weekend I tested a breakfast casserole and a Parchment Baked Tilapia recipe that were both easy, delicious, and gluten free. The tilapia recipe is already in the database, but the breakfast casserole recipe needs a bit more editing.
This week’s recipe to be tested is Turkey & Stuffing Burgers. I’m going to swap out packaged stuffing and use breadcrumbs and herbs that I already have in the pantry. I am NOT buying a box of packaged stuffing mix just to use one cup. I’ll serve it with Lemon Cranberry Orzo Salad (probably warm), and some steamed broccoli for color.
On a busy night we’ll have Nachos Supreme and a Mexican fruit salad. This is really easy to put together and everyone likes it. I like to make them in 2-3 cake pans so that people at the table can share more easily. Also nice if the guys are in the mood for added beef or pork.
I’m craving Corned Beef and will serve it with mashed potatoes and Spinach Sautee. Leftovers can be tucked into sandwiches for lunch!
Roasted Tomato Beef Goulash is also on the plan, along with saged peas. If you like peas, this is a nice recipe to infuse flavor into them.
That’s only 4 days, I know, but I plan on leftovers, and going out one night. We’re waiting for confirmation of guests for Sunday dinner – so that planning has to wait!
