Well, our first snow day blew in and has me making hot chocolate (which makes a cute gift in a mason jar) by the gallon it seems!  While the guys were moving all the snow I headed off to the grocery store to get the goods for this week’s meals.

Drive Thru Burgers @ MealMixer One night (probably tonight!) is burgers and oven fries.  Now that the grill is buried these have to be cooked inside, and a spatter shield becomes my good friend. 

Onions @ MealMixer Chicken Marengo is a very tasty dish that calls for caramelized pearl onions.  The store was out of the frozen version, and fresh were $3.50, so I’ll be using chunks of regular onion.  This is easily GFCF by omitting the flour.  And, since we’re all friends here, I’ll admit that it’s not often I flour meat before browning it – I just make sure the oil is hot.  This will be served with couscous to soak up the sauce, and steamed broccoli.

I’m testing a recipe for Roast Beef Eye Round with Au Jus.  That will be served with buttered and herbed noodles, and Ginger Ale Glazed Carrots – which I now cook with a hunk of ginger, some water, and a bit of sugar.  It saves calories and gives a more intense ginger flavor.

apricot It’s holiday potluck time!  I’m sending in Slow Cooked Apricot Pulled Pork Sandwiches because it’s always nice to have something warm and substantial but not too fussy.

ginger Also on the test list are Korean Spiced Beef and Cabbage Rolls.  I was surprised that these are baked in dough.  Should be interesting.  I’ll serve these with a salad and Ginger Salad Dressing.

And last, but not least, for Sunday dinner will be Pork in Maple Pear Sauce served with Sweet Potato Apple Hash, and peas.

Add some of these to your meal plan for some variety or holiday entertaining.
