There is no denying that it is winter now! I haven’t started holiday baking yet, but that’s coming! There are so many things going on at this time of year that I really need to carefully plan meals to keep us going.
Pork loin halves are on sale, so I’ll take part of one and make Pork Tenderloins Glazed with Ginger (the cooking time will have to be adjusted a bit because it’s not the tenderloin, but no matter), and serve it with Basmati Coconut Rice, (we bought a whole coconut and want to use the milk) and Lemony Snow Peas.
The other half, a few days later, will be Applesauce Pork Chops. The pork bakes in a sauce made with worcestershire sauce ketchup, and applesauce. I was skeptical at first, but the boys really like it. That will have buttered noodles and steamed broccoli with it.
On Wednesday I don’t have to be Chauffer Mom, so I’m going to make Chicken and Dumplings completely from scratch (broth included). I think I’ve done my research on the dumplings and they should come out…better than they have in the past! : )
There has been a request for spaghetti and meatballs. I’ve taken to just using ground turkey for the meatballs and no one seems to notice or mind. A simple salad will go with this entree.
Everyone is buzzing about latkes, so I’ll make Baked Latkes, but will also serve some Caramelized Onion Bratwurst because latkes just don’t keep boys filled up for very long! Of course you have to have applesauce, and also some fried green beans for something green on the plate.
Nacho night has also come around again. I use a full sheet tray to ensure that every chip is loaded with all the toppings. Might have to invite a few friends over…
