Happy Holidays! This week between Christmas and New Year’s Day seems to be food-fest around here. In addition to the sweets and treats and drinks I’ve tried to keep it reasonably healthy by presenting attractive trays of fruit and cheese and whole grain crackers.
Dinners this week are a combination of grazing through leftovers (the cuban sandwiches were a huge hit and sadly none were left), and easy dinners.
Taco night is super easy to put together – I do a combination of hard and soft tacos and set out everything buffet style.
Angel Hair Pasta with Italian Sausage and Herbs is a family favorite. I’ll serve it with some steamed broccoli.
This is a good place to slide in whole wheat or a healthier blend of pasta. Yes, this pasta does cost double – but it’s also doubly better for you!
My oldest son is a fresh ginger fanatic – and so I’m testing a recipe for Asian Flank Steak – which will NOT see the grill…because I can’t! It will be served with rice and a green vegetable, canned mandarin oranges (standard “asian night” around here), and liberal amounts of pickled ginger.
New Year’s Eve will bring something new and different to our table – I’m going to try fondue now that the boys are old enough to not set the table or themselves on fire. This is going to take some research – but it will most likely be Cider Cheddar Fondue and Beef Oil Fondue with a few dipping sauces. Of course there will be a salad on the side. A chocolate fondue for dessert is probably overkill - Chocolate Lava Cakes sound pretty darn good!
Oh, and that pop you may hear when the clock strikes midnight on 1/1/11? Probably just the button from my jeans… Back on the diet plan soon!
