Here it is…Monday again. Before I planned the menu for this week I looked at our family calendar. It is NOT dinner friendly – so I needed to plan things that can either be done quickly, or prepared ahead and left for grab and go. The guys are really busy and active, so they need plenty of calories, but I’ve set the diet settings for what I need.
So, what are we eating and how am I going to pull it off?
Chicken and Rice Casserole and Steamed Broccoli. This is an old recipe that I’m in the process of updating. I’ll have it all ready to go and pop it in the oven as I walk out the door for carpool – the broccoli will be in the microwave and ready to heat. I just need to do is leave instructions and come home to a hot meal.
Beef and Scallion Stir Fry, Rice, and Sushi House Salad and Dressing. The beef recipe is new (and being tested). This can be prepped and ready to cook when I walk in the door.
Drive-Through Burgers and Stuffed Baked Potatoes. My plan is to season the beef and form in into patties in advance, “bake” the potatoes in the crockpot, and then add the cheese and (leftover) bacon and broil while the burgers cook.
Chicken Enchiladas and Vegetarian Mexican Salad. I tested a beef enchilada recipe that was excellent, but am going to try it with chicken (I have some that needs to be used). I used the recipe editor to remove the corn from the salad and add some hot pepper sauce to the dressing.

The weekend gives me some time to breathe…
Coca Cola Baked Ribs, Baked Garlic Fries, and Dipping Veggies. A totally finger food meal. The ribs are a new recipe we’re testing (because ribs were on sale).
Pork French Dip Au Jus, Baked Sweet Potato Rounds, and broccoli. This is yet another testing recipe (from a member), and it looks fabulous. When I bake sweet potatoes in slices they disappear faster than anything else on the table – I think it’s how they caramelize in the oven. I may add roasted Brussels sprouts to this meal if they’re reasonably priced.
There is always fruit on the table – it just depends on what look fresh and is on sale.
