Don’t hate me because I cook; it’s my hobby. I don’t garden, I’m not athletic, and my husband hides his tools (what was so easy to take apart doesn’t go back together quite as nicely…). I’m always thinking about what’s for dinner, because sometimes the hardest part is figuring out what to make, and I know I'm not alone here. So, for your inspiration, amusement, or whatever, once a week this blog will be about what’s for dinner here (See, I do read emails!).
On Monday we had Apricot Glazed Pork Tenderloin. It was actually supposed to be dinner while we were camping, but we got rained out. I had mixed the glaze in a zip top bag, and ended up putting the pork in with it. I think it was even better marinated than it would have been glazed. It was served with steamed potatoes and chives, and some leftover fruit (no energy to go grocery shopping after camping).
Tuesday’s dinner was Grilled Turkey Sage Patties over a bed of Parmesan orzo (just cooked orzo with a little butter and parmesan stirred in at the end), and steamed broccoli.
The kids want Pork Dumplings tonight, and I’m going to try to duplicate the ginger dressing that our favorite sushi place serves on salad.
Nachos Supreme is one of the things on the menu when I want Russ to cook. The boys like to get in on the act, and a good time is had by all.
I’ll bake pan of Stuffed Shells that can be microwaved and eaten when it suits everyone. Actually, I’ll probably bake them out on the gas grill (on bricks) to keep the house cool.
I have the weekend off, but I’m testing a Lemon Cranberry Orzo Salad to take as a dish to pass.
That’s it! Next weekend is a girls’ camping weekend, and not only do I need to plan what we’ll eat, but what the guys will eat while they’re home alone.
