Wheat Free Wednesday – 3/9/11

It is a very gray and damp day here in Ann Arbor.  The best way to brighten up the gloom?  Colorful meals.  Being hungry only makes things worse, right?

 

 

 

Breakfast

Gluten Free Meal Planning @ MealMixer.comOatmeal Pancakes, Bananas, and Sausage.  We’re gonna rely on some Bob’s Red Mill Gluten Free Flour here, ok?  If you tend not to use it a lot – just store it in the freezer in a zip top bag.  Some members have said they like the pancakes with the bananas on top – which seems like a good idea to me.  Bananas.  Warm syrup.  I’m feeling happier already.

 

Lunch

Gluten Free Meal Planning @ MealMixer.comChicken Spinach and Fruit Salad.  This salad is sure to brighten your day!  It’s fine to use leftover chicken, or even to  micro-poach it.  If strawberries are too tasteless/expensive substitute red bell peppers (tomatoes are outrageous right now!)  The tiny, sweet mandarin oranges give color and sweetness.  It’s a happy salad.

 

 

Dinner

 

Gluten Free Meal Planning @ MealMixer.comRainbow Stuffed Peppers, Tortilla chips, Berry Melon Mix.  Use the recipe for the stuffed peppers as a starting point and jazz them up in any way that moves you.  It’s a good place to put brown rice if your family isn’t that fond of it on it's own.  The tortilla chips add crunch.  Again, if where you are the fruit isn’t working, toss together a few cans of what you like (packed in juice) and maybe a bit of something fresh that is.  Berries weren’t in the cards for me this week but I did pick up a fresh pineapple.
