Apricot Glazed Pork Tenderloin

12 ozs   pork tenderloin
2 tsps   olive oil
1/4 tsp   kosher salt
1/8 tsp   freshly ground black pepper
1/2 cup   apricot jam
2 tbs   grainy mustard
  • Preheat broiler 4" from heat source and line pan with foil.
  • Rub pork with oil, salt and pepper.
  • Broil 10 minutes, turning after 5 minutes.
  • While pork is broiling, mix remaining ingrdients in a small saucepan and cook and stir until jam is melted.
  • Spoon half of the sauce over the pork and continue to broil for 5-10 more minutes, until internal temperature is 150 degrees.
  • Remove pork and tent with foil to allow residual heat to rise to 155.
